BRUNCH ANYONE? 😃
💥INGREDIENTS – boiled potatoes, spinach, peppers and onions, feta cheese, chilli, spring onion, eggs.
💥Heat small amount of oil in pan (I like coconut oil) add peppers, onion – cook until soft add sliced potatoes, turn heat down low and add spinach.
💥As spinach starts to wilt add eggs and keep on low heat.
💥When eggs firm up take pan and place in pre heated oven and under a low grill. After 5/7 mins add the feta and chilli and bake until slightly brown on top.
💥Remove, leave to sit until it’s just warm … then EAT!!!! Also tastes great the next day cold 😋😋😋😋😋
