Did you know? … Butter beans are a great healthy source of carbohydrate, fibre, B vitamins, iron and fibre. Aubergines are a great source of vitamins B1, B6 and potassium along with the minerals .. magnesium and manganese and also contain the fantastic antioxidant β€˜nasunin’ … what’s not to like πŸ€·β€β™€οΈ

Ingredients:- Small can butter beans washed & drained, juice 1/2 lemon, 1 garlic clove, 2 tbsp olive oil, 1/2 tbsp tahini paste, 1 Aubergine.

This is lovely …. Slice the Aubergine, place on baking tray, coat in olive olive and grill for 10 – 15 mins until slices start to very slightly brown. Leave to cool.

Meanwhile … Shell the butter beans for a really smooth dip … however this is not necessary and the version with the shells is rustic and more chunky. Whiz in a blender with the aubergine and all the other ingredients… you may prefer to add more lemon juice or tahini to taste. When blending you may need to keep stopping and pushing the mixture down or if it’s too sticky add a little water πŸ’š

You can replace the beans with chick peas or kidney beans etc if you don’t have butter beans to hand πŸ€—.
