CAULIFLOWER SOUP (take a look in comments below) …..

This is so easy and tastes like half a pint of cream has been added (it hasn’t) natural goodness….. I make a large batch and freeze it. .

INGREDIENTS:- 500ml vegetable stock (You can buy it or I keep back and freeze the water from any veg I boil), 500ml skimmed milk, 1 Garlic Clove, 1 Cauliflower, 1/3 of a Leek.

PREP TIME:- 15/20 mins.

Cut Cauliflower into small florets, slice leek, add in with the garlic and brown off in pan, add in stock and milk, bring to the boil and then simmer until soft.

Blitz in a processor …. eat some/save some …. I added in some curried chick peas (see earlier post) and sprinkled with pepper paprika and corriander (optional).
