CHICKEN AND SPINACH CURRY πŸ₯˜

This recipe was given to me yesterday by Mrs Briscoe (thank you) … I tweaked it by adding coconut cream and chilli powder but if you use small hot 🌢 you won’t need the powder.

Ingredients:- 1.5 tbsp coconut oil, 2 small red onions chopped, 3 crushed garlic cloves, 2 medium heat deseeded and thinly sliced chilli, 1 tsp fresh ginger, 1 tsp chilli powder, 3 tsp mustard seeds, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp ground turmeric, small carton of coconut cream, spinach 400g chicken thighs, 375ml chicken stock (I use home made), 100g spinach, coriander leaves to dress.

Heat coconut oil in a large pan, gently fry onion, garlic, chilli, ginger…. when they are soft add in all the spices and continue to cook until fragrant. Add chicken thighs and stock … bring to boil, turn down heat and simmer … at this point stir in the coconut cream to taste if your choose to use it. Simmer for 45 – 60 mins until cooked. Add the spinach… stir until wilted and then serve upπŸ‘
