CHICKEN SATAY

CHICKEN SATAY (with tomato, avocado and onion salad).

This was my lovely supper last night on a warm balmy evening πŸ˜ƒ

Ingredients for chicken Satay:- 2 Chicken breasts, 1/2 small bunch fresh coriander, 1 fresh red chilli, 1/2 clove garlic, soy sauce, 2cm piece fresh ginger, 2 limes, 3 large teaspoons of nut butter (I used almond – of course you can use regular peanut butter)…. here is the link for making the satay sauce or check out previous post … πŸ‘‰ https://www.facebook.com/permalink.php?story_fbid=451607998614331&id=403694553405676

Slice chicken into chunks. Marinade in sauce for up to an hour. Keep half the sauce back for dip. Soak skewers in cold water. Assemble chicken on skewers and grill for approx 20 mins turning halfway through.

Serve up with remaining sauce as a side dip.

You may prefer rice or noodles .. I fancied salad … I dressed the salad with a tiny splash of sesame oil and red wine vinegar (sounds random but the sesame really worked with the satay) πŸ˜‹
