CHICKPEA AND AUBERGINE SALAD πŸ†πŸ₯—

I had this last night with herbed chilli chicken breast (chicken recipe in previous posts).

Ingredients:- Chickpeas, red onion, coriander, aubergine, olive oil, lemon juice, ground cumin, paprika, handful of coriander leaves.

Thickly slice aubergine, brush with oil, season with salt and pepper, grill for 8-10 mins until lightly browned and soft, remove and leave to cool.

Dressing- Combine 4 tbls olive oil, 4 tbls lemon juice, 1 tsp paprika, 1 tsp cumin.
.
Rinse chickpeas and leave to drain, finely chop red onion, cut aubergine slices into chunks, mix together and dress to taste, mix through chopped coriander and serve πŸ’πŸΌβ€β™€οΈ
