CHOC CUP CAKES

These are soooooo good … the pictures do not do them justice 😍!

Ingredients:- 60g coconut flour, 1 tsp baking soda, 1 tsp vanilla extract, 2 tbls dark cocoa powder, 2 tbls melted coconut oil, 2 eggs, 3 tbls maple syrup, 70ml coconut milk…. makes 6.

Optional frosting:- 4 tbls coconut milk, 1-2 tsp cocoa powder, 2 tbls almond (or any nut butter), maple syrup to taste.

Pop flour and baking powder in a bowl, add in the coconut oil, eggs and syrup, add coconut milk, continuously stir until you get s smooth fairly runny batter.

This is an adaptation of an Amelia Free recipe … I had to keep add more coconut milk than the 70g suggested to make the batter runny (see picture).
.
Pour the batter into the paper cases and bake in the oven for 18-20 mins .

Leave to cool and then add frosting if you like 😍😍😍😍
