COCONUT CHICKEN AND VEGETABLE RICE
I’m posting this a day late 🤦🏼♀️ yesterday was a very big day 🤪.
INGREDIENTS:- Left over roasted vegetables and chicken from the previous evening meal and leftover boiled rice from the rendang dish (see previous posts), coconut milk, spinach, garlic, lime juice, fish oil, ginger, chilli…. see below in comments.
In a Wok or deep large frying pan heat pressed coconut oil until it turns clear, add in finely chopped garlic, ginger and chilli (you can do without any of these if you prefer) and heat for a upto 1 min….. take care not to let them burn or turn brown.
Add in the rice, coat in oil and a couple of spoons of fish oil (optional … the dish doesn’t taste of fish at all though) and throw in the chicken strips and veggies. Keep turning the ingredients in the pan and when heated through add in a couple of tablespoons of lime juice and a little coconut milk…enough to coat the rice …. too much will make the dish too wet!! Add in spinach and cook for another min… remove from heat and EAT 😋
