CREAMY CHICKEN, ASPARAGUS, SPINACH & MUSHROOM PENNE

CREAMY CHICKEN, ASPARAGUS, SPINACH & MUSHROOM PENNE PASTA:-

Ingredients:- Mixed mushrooms, chicken breast, white onion, garlic, asparagus, spinach, coconut oil, penne pasta, ground black pepper, fresh cream or coconut milk.

I made two dishes … one for hubby and one for me. My dish was made using gluten free buckwheat pasta (I was curious… it was delicious by the way but don’t forget to add a splash of olive oil when boiling!!!] and his was regular penne pasta. (Serves 2/3)

Finely chop 1/4 white onion and 1 garlic clove, dice 1 chicken breast and finely chop 2 hands full of mixed mushrooms. Place pasta on to boil (following instructions on packet) and steam 2 large asparagus stems for 2 mins (you can blanch them if you don’t have a steamer).

Heat 2 large spoons of coconut oil in a pan until clear and add in the garlic and onion… heat for a minute and then add in the chicken breast… heat until chicken is almost cooked fhrough and then add in the asparagus stems chopped along with the mushrooms …. heat for another few mins until cooked through and then add inn 2 generous spoons of either fresh cream or coconut milk. Add in a handful of spinach and keep stirring for another couple of mins until spinach has wilted.

Stir through pasta add black pepper to taste and option top with Parmesan or Italian hard cheese and serve πŸ˜‹πŸ˜‹.
