EASY GREEK ZOODLE SALAD πŸ₯¬πŸ₯’πŸŽπŸ₯—

For the Salad:

1 cucumber

8.8 oz. (250g) cherry tomatoes

2 spring onions

3.5 oz. (100g) feta cheese

1.1 oz. (30g) black olives

For the Dressing:

1 tsp. dried oregano

1 tbsp. lemon juice

2 tbsp. olive oil

1 large garlic clove, crushed

Cut the ends of the cucumber and spiralize it into a bowl. Cut the cucumber β€œnoodles” in 2-3 parts, to shorten them.

Cut the cherry tomatoes in halves, chop the spring onions, and cut the feta into cubes. Add everything to the cucumber.

In a cup or small bowl, mix the ingredients of the dressing, then drizzle over the salad and mix gently. Divide between two plates and serve.

This salad is also a perfect side for grilled meats.
