EGG, SPINACH, ASPARAGUS AND AVOCADO SUSHI πŸ˜‹πŸ˜‹πŸ˜‹

I made these for breakfast today … you would not believe how easy they are … and they look fantastic (if I do say so myself πŸ€—).

Ingredients:- Egg, spinach, avocado, asparagus, Italian hard cheese (optional), fresh chilli, chilli flakes and chia seeds (also optional).

Heat coconut oil in a pan, add in the asparagus and optional fresh chilli and heat until soft, add in the egg and cook at very low heat, when the egg starts to firm add in the spinach and optional chilli flakes, chia seeds and tiny amount of grated Italian cheese, flip over when omelette is formed and cook for 30 secs/1 min.

Remove from pan, place on board and smear with a coating of mashed avocado. Roll up tight… see pictures and slice into β€˜sushi’ pieces…. et voila πŸ’πŸΌβ€β™€οΈπŸ’š
