HERB CHICKEN AND BROCCOLI LINGUINE (see comments below for more pics and ingredients👇)

The cauliflower soup (see previous post) works as a fantastic healthy replacement for a creamy pasta sauce and is the basis for this dish along with other leftovers.

INGREDIENTS:- cauliflower soup, chicken breast ( i used extra and will keep one in the fridge for another dish/day), broccoli, garlic, spring onion, spinach, mixed herbs, coriander, linguine.

Coat chicken breast in olive oil and dried mixed herbs and grill for 20 mins/or until cooked (make extra and use in salad/other dishes next day).

Put dried linguine on to cook for 10/12 mins until al dente.

At the same time heat coconut or olive oil in a pan and add in the chopped garlic and broccoli broccoli, and after 1 min add in the spring onion and gently heat until broccoli starts to soften (take care not to burn the garlic). Stir in the cauliflower sauce and coriander (optional), bring to a gentle simmer then stir in the spinach. When the spinach is wilted remove from the heat and mix through the linguine.
