LUNCH TODAY …. Less than 10 mins to put together!

Ingredients :- Baby spinach, lettuce, roasted peppers, white onion, avocado, feta, balsamic, extra virgin olive oil, pine nuts, chia seeds, chilli flakes.

This morning I’d already roasted peppers as part of my meal prep for the week. .
.
Pop leaves in a bowl and dress with oil and balsamic. Plate up and top with peppers avocado and feta.

Option – added chia and pine nuts (as I always have these in stock) and a handful of chilli flakes β€˜cause I love them 😍
