MUSHROOM, LEEK AND CHICKEN BAKE.

Soooo earlier in the week I picked up a pack of chopped mushrooms with the intention of doing something really creative with it. I got to the end of the week …. all set to take a mini break and am left with a fridge full of leftovers…. including the mushrooms πŸ€¦πŸΌβ€β™€οΈ….. This is what I cobbled together to save any waste!

INGREDIENTS:- leftovers (see previous posts) cauliflower soup, chicken skewers…. along with … chopped mushrooms, leek, spinach, turmeric, black pepper, coconut oil, eggs.

Sweat down mushrooms and leak in heated coconut oil, add in finely chopped chicken pieces, turmeric and black pepper, stir in the cauliflower soup and spinach, bring to a gentle simmer and then take off the heat and leave to cool to β€˜just warm’. Mix in whisked egg to thicken mixture and then bake for 20-30 min at 180.

Serve with dressed salad πŸ₯—
