My late lunch early dinner today….

PENNE WITH ROASTED PEPPER & CHILLI SAUCE WITH SPINACH AND AUBERGINE 🍆

💥INGREDIENTS:- Roasted Peppers, Chilli or Chilli flakes, Spinach, Aubergine, Basil leaves or dried Basil.

💥Pre Cook Penne Pasta and roast peppers at 180 for 15mins coated in olive oil.

💥Blitz peppers in blender along with basil with a little warm water to create sauce.

💥Slice aubergine (or any veg you have spare) chilli and heat in pan with a little olive oil and garlic if you like…. when softened add in pepper sauce and simmer for 8-10 mins. Add in the spinach at last minute and remove from heat when spinach has wilted.

💥Stir through the Penne, serve, eat 😋

I added a spoon of natural yogurt as I added lots of chill and like my sauce hot 🌶
