My late lunch early dinner today….

PENNE WITH ROASTED PEPPER & CHILLI SAUCE WITH SPINACH AND AUBERGINE ๐Ÿ†

๐Ÿ’ฅINGREDIENTS:- Roasted Peppers, Chilli or Chilli flakes, Spinach, Aubergine, Basil leaves or dried Basil.

๐Ÿ’ฅPre Cook Penne Pasta and roast peppers at 180 for 15mins coated in olive oil.

๐Ÿ’ฅBlitz peppers in blender along with basil with a little warm water to create sauce.

๐Ÿ’ฅSlice aubergine (or any veg you have spare) chilli and heat in pan with a little olive oil and garlic if you like…. when softened add in pepper sauce and simmer for 8-10 mins. Add in the spinach at last minute and remove from heat when spinach has wilted.

๐Ÿ’ฅStir through the Penne, serve, eat ๐Ÿ˜‹

I added a spoon of natural yogurt as I added lots of chill and like my sauce hot ๐ŸŒถ
