ORANGE SOUP!!

Another beautiful sunny morning 😎 but I don’t think we’re out of the woods with this cold snap yet! So I am still working my way through the soup I forward prepped. This one is πŸ˜‹

INGREDIENTS:- 500ml vegetable stock (You can buy it or I keep back and freeze the water from any veg I boil), 500ml skimmed milk, Carrots, Butternut squash, roasted peppers, physalis (or orange juice) and paprika.

PREP TIME:- 15/20 mins.

Cut the carrots and squash into small chunks and soften off by warming in coconut oil for a few mins add in stock and milk, physalis, peppers and a generous spoon of paprika, bring to the boil and then simmer until soft.

Blitz in a processor …. eat some/save some πŸ˜‹
