PEA & MINT DIP/PURÉE.
I use this both cold as a dip and as a gravy replacement over mash and vegetables.
INGREDIENTS:- SHELLED PEAS, MINT JELLY/SAUCE, OLIVE OIL.
Boil peas until very soft …. I also add in any ‘greens’ I have hanging around …. for this version above I boiled broccoli stalks along with the peas.
Blitz in a blender with a spoon full of olive oil and a spoonful of mint jelly/sauce (just a little these are normally stacked with refined sugar)….. add in some of the water you boiled the peas in to form a purée.
Serve warm over mash and veggies or cool and eat as a refreshing dip 😋
