ROASTED PEPPER PENNE WITH CHICKEN AND SPINACH
INGREDIENTS:- Pepper ragu, herbed chicken(see previous posts), penne pasta, spinach, mixed seed and corriander (optional) Parmesan or any Italian hard cheese.
Cook Penne for 10/12 mins until al dente…. at the same time heat the pepper ragu, and chicken and add a sprinkle of corriander…… when sauce starts to simmer add in spinach and take pan off heat when the spinach has wilted.
Mix through the penne and top with mixed seeds and Parmesan cheese.
