This cheeky little concoction is so versatile, it can be used as a stand-alone dip, topping for any meat skewers or steak …. and works as a great marinade πŸ˜‹

Ingredients:- 1/2 small bunch fresh coriander, 1 fresh red chilli, 1/2 clove garlic, soy sauce, 2cm piece fresh ginger, 2 limes, 3 large teaspoons of nut butter (I used almond – of course you can use regular peanut butter).

In a food processor add the coriander (stalks and all), chopped chilli & garlic, nut butter, splash of soy, chopped ginger, grated zest of both limes and the juice of one lime ….. blitz into a paste adding a bit of water if needed. If using as a dip serve up and add a little olive oil as preferred πŸ₯œπŸ’πŸΌβ€β™€οΈπŸ˜ƒ
