These are lovely and taste very much like chicken tikka. As always I make far too many and use the extra chicken in other dishes (as you’ll see in my following posts) … I really like using them in wraps.

INGREDIENTS:- Chicken breast, dried oregano, coriander & fennel seeds (powder if you prefer), cayenne powder, turmeric, lemon juice, olive oil… cracked black pepper (optional, see previous posts)

Grind down 2 teaspoons of fennel and coriander seeds, add 2 teaspoons of oregano and 1 teaspoon of cayenne powder and turmeric, 1 desert spoon of lemon juices and 3 tablespoons of olive oil (or enough to combine ingredients and cover chicken). Add in 2 – 4 diced chicken breasts and leave to marinate in fridge for an hour

Soak skewers in cold water…. load up with chicken and grill or bake for approx 20 mins or until cooked.

Serve with vegetables or salad πŸ˜‹
