SPICY OATCAKES πŸ˜‹

These are really filling … great to grab and eat on the go …packed with fantastic sources of minerals such as selenium, magnesium & zinc.

This recipe is courtesy of Dr Rupy Aujla and is sooooo versatile … you can change the flour you use, the seed mix and throw in a little dried fruit if you’d prefer a sweet biscuit 😍.

Ingredients:- 125g Spelt flour (you can use oat flour etc if you prefer), 3 tbsp sesame seeds, 2 tsp fennel seeds roughly ground, 2 tsp cumin seeds roughly ground, 3 tbsp flaxseeds, 3 tbsp pumpkin seeds, 3 tbsp sunflower seeds, 3 tbsp butter, softened, sea salt and freshly ground pepper … optional.

Combine ingredients, add in a little water (30-50ml) and mix until ingredients come together.

Place mixture between two sheets of greaseproof paper and flatten with a rolling pin to thickness of a Β£1 coin.
.
Cut into circles roughly 5cm in diameter and bake in oven at 200C/180C fan for 10mins until lightly golden.
