SUNSHINE SALAD

SWEET AND SOUR SUNSHINE SALAD πŸ˜Žβ˜€οΈπŸŒˆ

Yesterday was sooooo miserable 🌧 I felt in need of a bit of colour!!!!! Please note …. I used a thick sweet balsamic vinegar for this …. if the version you use is thinner only use a splash otherwise it will overwhelm the other flavours.

INGREDIENTS:- Butternut squash, yellow pepper, mango, tomato, avocado, beetroot, soft lettuce leaves, pea sprouts, hard Italian cheese, chilli flakes, spring onion, olive oil, balsamic vinegar, nuts and seeds.

Coat squash and pepper in olive oil, sprinkle with chilli flakes and roast for 20 mins @ 180 degrees. Leave to cool and save excess for another day.

Coat leaves in olive oil (I used the chilli infused version I made yesterday … see previous post…. top with chopped ingredients and drizzle with balsamic and sprinkle with seeds trust me ….. you won’t be disappointed πŸ‘ŒπŸ’š
