TABBOULEH WITH AVOCADO, FETA CHEESE AND A DRIZZLE OF BALSAMIC πŸ₯‘πŸ₯—…..

This was my lunch today using the left over tabbouleh from yesterday’s eve meal.

TABBOULEH

INGREDIENTS:- 50g bulgar wheat, 50g parsley, chopped, 50g mint, chopped, 200g ripe tomatoes deseeded and diced, 3 spring onions, finely sliced, 1 lemon juice, 3 tbsp olive oil.

Rinse the bulghar wheat in a seive until the water runs clear. Drain well, then transfer to a bowl. Pour over 209ml boiling water, cover with cling film and leave to soak for 30 mins.

In another bowl place the parsley, min, tomatoes and spring onions.
.
Drain the bulghar, add to the herb mix, along with the lemon juice and olive oil. mix together and season to taste.

Top With Feta, Avocado & Balsamic πŸ’š
