TURMERIC AND CAYENNE AUBERGINE
This is delicious on its own with topped with natural yogurt or as a side dish … I like it with a piece of steak and salad 😋
INGREDIENTS:- Aubergine, coconut oil, turmeric powder, cayenne powder (optional coriander).
Heat quite a generous amount of coconut oil in a pan, microwave sliced aubergine for 1 min to partially cook and then coat in turmeric and cayenne. Add to oil and heat until gently browned and cooked through. Top with coriander and serve……. note the aubergine will absorb the oil very quickly… if it drys out in the pan add a splash of boiling water but please take care when adding water to oil!!!
