WINTER VEGETABLES, SPINACH AND CURRIED CHICKPEAS

WINTER VEG SPINACH AND CURRIED CHICKPEAS……… it was soooo cold last night ❄️ I shovelled this lot down to make me feel warmer…. I always cook more veg than I need (see pic in comments) and use the leftovers for soup or throw into a salad the next day 👌🏻👌🏻👌🏻👌🏻

💥INGREDIENTS … Butternut squash, courgette, new potatoes, sweet potato, red onion, red pepper, parsnip, garlic cloves, carrot, aubergine, spinach and Jamie Oliver’s curried chickpeas………………

💥Cut vegetables into similar sized pieces, cover in olive oil, mixed herbs and roast at 180 for 40 mins…………..

💥Warm chickpeas through and serve up on a bed of spinach and a dollop of natural yogurt……………
